Getting my Spaghetti & Meatball Fix

A few years back, I was on the Raw Food Diet. And one of my favorite dishes was an all veggie spaghetti and italian tomato sauce dish, that was totally uncooked. For noodles you would use a saladacco slicer to  make noodle out of zucchini. The sauce was a marinara sauce with all raw ingredients. It was quite tasty.

Actual pasta is high in carbohydrates so, its not a good fit for the ketogenic diet. Then I remembered the raw dish. I did not make the raw marinara sauce. Instead I opted for a Bertolli tomato and basil ready made sauce. It’s high in sodium and a little high in carbs, but, I didn’t have time or resources to make my own. I will next time. Mine is better.

For meatballs I used Abruzzese Style Meatballs (blended cheese & herbs), by Carando. Lots of sodium in this product as well. I can also make better home made meatballs as well, which I will do next time. For today though, it served a purpose.

Spaghetti noodles of course were made of zucchini. It’s different because the noodles are somewhat crunchy, which I don’t mind. I imagine I could have cooked them to make them more tender, but, I was afraid of making them too tender. I didn’t want them falling apart.

The taste was decent enough. It satisfied my hankering for spaghetti and meatballs. Next time I will make the meatballs and sauce my self. I’m sure I can bring the calorie count down, and for sure, the sodium count.

  1. The picture above is not the actual dish I made. I didn’t think to take a photo before I ate it. I will when I make all the components myself.
