Bacon Cheeseburger Soup

This year I plan to find and try new keto-friendly recipes. I have found one site so far which offers recipes. I hope to find more recipes to offer. And since it is the keto diet I am using, I would also like to post more keto-friendly recipes here as well.

The first site I have found is http://www.ruled.me/. It seems to have many great looking recipes. The first one I intend to try is this Bacon Cheeseburger Soup. Sounds like a great wintertime soup.

5 slices Bacon
12 oz. Ground Beef (80/20)
2 tbsp. Butter
3 cups Beef Broth
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
2 tsp. Brown Mustard
1 1/2 tsp. Kosher Salt
1/2 tsp. Black Pepper
1/2 tsp. Red Pepper Flakes
1 tsp. Cumin
1 tsp. Chili Powder
2 1/2 tbsp. Tomato Paste
1 medium Dill Pickle, diced
1 cup Shredded Cheddar Cheese
3 oz. Cream Cheese
1/2 cup Heavy Cream

Directions

Cook bacon in a pan until crispy, then set aside.

Add ground beef in the bacon fat and cook until browned on one side, flip and brown on the other side.

Transfer beef to a pot, and move it to the sides. Add butter and spices to the pan and let the spices sweat for 30-45 seconds.

Add beef broth, tomato paste, cheese, and pickles to the pot and let cook for a few minutes until melted.

Cover pot and turn to low heat. Cook for 20-30 minutes.

Turn stove off, then finish with heavy cream and crumbled bacon. Stir well and serve.
