I have been trying several different recipes for pizza dough. This one comes the closest to what I have been looking for. It is light and crunchy, and, its very easy to put together.
Ingredients:
5 cups all purpose or 00 flour + some for dusting
1 1/2 tsp active dry yeast
1 1/2 tsp sea salt
2 1/4 cups COLD water
1 tbs extra virgin olive oil
Directions:
1) Mix all ingredients together in a mixing bowl.
At first the dough will be somewhat sticky.
2) Add small amounts of flour until the dough begins to pull away from the sides of the bowl.
3) Once the dough pulls away from from the bowl, let it continue to knead for 10 minutes.
4) Turn the dough out onto a floured surface. Shape into a ball. Place it in a oiled bowl and cover for two hours. Then the dough will be ready to stretch and bake. You can also leave it refrigerated over night. It just needs to come up to room temperature before use.
